Paleo Super Bowl Snacks—The Caveman Game Plan

Super Bowl Sunday is almost here. If it’s anything like the last time these teams met in Super Bowl XLII in 2008—we are in for a treat.

Speaking of treats, being the Paleo warrior that I am, I want to share my winning strategy for entertaining guests—caveman style! That means we’re going commando—no bread, no buns and no sugar.

So with that I give you something we all crave: food you can eat with your hands! That's right football fans, sans fork and spoon.

Now, what would a Super Bowl party be without chips and appetizers? In this article I have suggestions for snacks (sweet potato chip), appetizers (paleo patties), a condiment (guacamole) and an entree (ribs).

To cut down on the stresses of entertaining guests I recommend doing as much as possible the day before. First things first, take care of the shopping.

Shopping List

Garlic, bag of spinach, 3-4 sweet potatoes, 2 tomatoes, 2 red onions, cilantro, 1 sweet pepper, 2 serrano chiles, 4 avocados, 2 Racks of Ribs, 1 lb ground beef, 1 lb ground Italian sausage, eggs, coconut oil, olive oil, orange juice and spices (garlic powder, oregano, cumin, cayenne pepper, paprika, ground chipotle, cinnamon and ground mustard seed)

Don’t forget game watch party essentials: foil, paper towels and paper plates.

Tip: The trick to having a good time and avoid last minute hurdles and stressors is to prepare as much as you can the day before. So Saturday, we are braising the ribs and making the sweet potato chips and guacamole.


Sweet Potato Chips

2 large sweet potatoes, sliced thin
2 tbs cooking oil (coconut oil is Paleo-preferred)
½ tablespoon salt

Preheat the oven at 400 degrees. Put your sweet potatoes in a cooking bowl and add oil. Mix them with your hands and make sure the potatoes slices are coated evenly with salt and oil. Next, line your cooking sheet with foil and place potato slices on the sheet. Bake for 14 minutes on one side. take them out and flip, bake an additional 10 minutes.

Tip: Keep a close eye on the sweet potatoes chips, so they don’t burn.


Guacamole

4 avocados
1 red onion diced
2 tomatoes diced
2 cloves of garlic
1 lime

Optional: 2 serrano chiles chopped and seeded, salt and pepper to taste

Peel and mash the avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for a half-hour.

Tip: To maintain color, save one avocado stone and put it in the guacamole.

Paleo Patties

1 lb ground beef
1 lb Italian sausage (optional)
1 green pepper
2 cloves of garlic, minced
½ onion, minced
¼ cup cilantro, minced
2 eggs
1 teaspoon cumin
1 teaspoom paprika
1 tablespoon cayenne pepper
1 tablespoon oregano.
Salt and pepper to taste

First, saute your garlic, onions, cilantro, sweet peppers and spinach in a frying pan with 1 tbs of olive oil for about a minute and a half. Put aside. Beat eggs.

Put meat in a large bowl. Gradually fold in eggs and sauted vegetables. Let everything sit for about a half an hour in the refrigerator.

Form into patties and grill. Serve your patties topped with guacamole.


Nearly Paleo Rubbed Ribs

Tip: Braising takes 3-4 hours, so do it the night before.

First, trim off the membrane of fat around the ribs. Secondly, rinse and pat them dry with paper towels.

Mix a rub: Have fun with your rub—create your rub using your favorite spices. Just make sure you taste the mix. You don’t want to add too much of one spice or salt.

1 tablespoon cumin
1 tablespoon ground chipotle pepper
1 tablespoon cayenne pepper
1 teaspoon cinnamon
1 tablespoon coarse salt
1 tablespoon black pepper
1 tablespoon paprika
1 tablespoon onion powder
1 tablespoon garlic powder
pinch of ground mustard

Coat your ribs with your mixed rub.

Now, concoct a braising liquid.

2 cups orange juice
1-2 cups beef broth
3-4 tablespoons honey

Thoroughly coat the ribs with the liquid.

Now wrap the ribs with foil. Preheat the oven to 200 degrees. Place in the oven for 3-4 hours until the meat is tender and the bone is visible.

Refrigerate the ribs over night. On Sunday (I do this during half-time), grill the ribs for ten minutes on both sides over a medium flame. Cover with foil and let the meat rest for 15 minutes. Serve.

If everything goes according to the caveman game plan, you will have satisfied your friends and family without stressing yourself out. Don’t cook while the game is on—have fun! My predictions? Giants 30 — Patriots 27. MVP: Eli Manning.
