In this installment of Cooking Healthy in Indian Country Meagen Baldy focuses on winter squash. She shows viewers how to make a roasted squash with kale, cucumber, and tomatoes, topped with a peanut butter and olive oil sauce.

Baldy is informative as she shows viewers how to prepare dishes.

“This squash is low in fat, it delivers an ample dose of dietary fibers making it an exceptionally heart-healthy, friendly choice,” she says. “It carries vitamin B6, essential for proper functioning of both the nervous and immune system.”

During her video she even pays tribute to Elouise Cobell for her work taking on the U.S. government over mismanaged funds. Baldy used her check to buy a new stove.
